Besan ki roti and paratha
Besan or gram flour is used in a number of ways. People make pakoras and karhi from besan. Let’s make some rotis and parathas today from the very basic besan found in our kitchens. We fry our parathas in SUFI banaspati because it is safe, healthy and low cholesterol; therefore it suits the needs of everyone in the household, from kids to their grandparents.

Ingredients
- 1 cup besan
- 1 cup flour
- Salt, to taste
- Red chilli powder, to taste
- ½ tsp zeera
- 5 tbsp finely chopped green coriander
- 1 small onion, finely chopped
- Water, to knead
- SUFI Banaspati, as required
Method
Put all ingredients except water and SUFI banaspati in a shallow dish. Mix thoroughly.
Put water in small quantities and mix in the flour mixture, bringing it together. Add enough water to knead the four into stiff dough. Rest dough for 10 – 15 minutes. Knead the dough for a couple of minutes.
Heat a girdle on medium flame. Dust a surface with flour to roll out the dough. Take a small ball and roll out with a light and steady hand. Place the rolled out besan disc on the hot girdle and cook, a couple of minutes on both sides or until done.
At this point, you can remove the roti and place it in a hot pot to keep warm. You can rub a little SUFI banaspati on the besani roti, after removing it from the girdle. Or you can fry the roti in small quantities of SUFI banaspati and make a besan ka paratha.
Serve with mint chutney and a cup of Kashmiri tea.
