Mixed bean salad with Simply SUFI chicken nuggets

Who says salads have to be boring? You can take your healthy food up a notch with our simply SUFI chicken nuggets.

Recipe
Ingredients

  • 6 Simply SUFI chicken nuggets, baked and sliced in half
  • 1 cucumber, diced
  • ½ cup boiled chickpeas
  • ½ cup boiled red kidney beans
  • ½ carrot, diced
  • 2 lettuce leaves, finely chopped
  • 1 onion diced
  • Salt, to taste
  • Black pepper, to taste
  • Juice of 1 lemon

Method

Mix all ingredients except Simply SUFI chicken nuggets. Toss around to combine. Refrigerate for a couple of hours. Before serving, add the chicken nuggets and toss around. Serve with a sprinkling of cottage cheese or feta cheese.
