Chicken Pide
Pide are Mediterranean answer to the pizza and can be made with versatile toppings. We love making our Pide with chicken.

Ingredients
1 tsp instant yeast
½ tsp sugar
Warm water, as required
2 cups flour
¾ tsp salt
1 ½ tsp olive oil
Simply SUFI Chicken Nuggets, as required, prepared as directed and sliced
1 cup mozzarella cheese
Handful of coriander, finely chopped
1 egg, beaten with 1 tbsp water
Method
Mix flour, salt, yeast and sugar in a bowl. Knead a soft, pliable, non-sticky dough with warm water. Add olive oil and knead it in. Set aside to rise.
When doubled, punch dough and divide into two. Make oblong discs around ¼ inch thick.
Preheat oven to 180C.
Lightly brush with olive oil. Spread some mozzarella cheese. Spread sliced Simply SUFI Chicken Nuggets over the cheese. Add some more cheese over nuggets. Sprinkle green coriander over the cheese. Twist the short ends to form a boat. Brush exposed dough with egg. Bake for 10 to 15 minutes until pide is golden and cheese is melted. Serve hot.
